Air Fryer Eggplant

Our school has a vegetable garden and we were able to snag an eggplant last week. I wanted to make something quick, tasty and gluten free so we made this recipe and it was DELICIOUS! There are so many ways to make eggplant so I'm looking forward to trying other recipes too!

Air Fryer Eggplant Ingredients 1 medium eggplant 2 eggs 1c gluten free breadcrumbs (or regular if no allergies) Seasoning - italian, garlic, onion powder (optional)


Directions

Wash your eggplant and slice off the ends then slice into ¼ inch pieces. Place eggplant on a flat surface (cooking sheet, cutting board, plate, etc). Salt the eggplant and let it sit for 15 minutes. Flip the eggplant slices, salt again and let sit for 15 minutes.


In a small bowl beat eggs, set aside. In a another small bowl mix breadcrumbs and seasoning. Dip each eggplant piece into the egg mixture, followed by the breadcrumb mixture to coat. Make sure you coat both sides.


Cook the eggplant in the air fryer at 380F for 4 minutes.


Then you are going to flip over each piece and cook for an additional 4 minutes at 380F.
