It all started because my mom found Gluten Free french fried onions on sale for $0.34! So I immediately started searching for some recipes that I can make. As always, I made some tweaks to the recipe but this was a huge hit with my family so we will for sure be making it again! This would be able to be frozen as well!

Beefy French Onion Rice Casserole
Ingredients
1 (18.5oz) can french onion soup - I used Progresso, its GF
2 cups beef broth
2 cups long grain white rice, uncooked - I used Jasmine
1/2 cup unsalted butter, cut into slices
1 medium yellow onion, diced 1-2 lb. ground beef
1/2 tsp garlic powder
1 Tbsp soy sauce
2 tsp Worcestershire sauce
1 cup shredded cheese - I used mexican because we had it on hand
2 – 3 oz French's fried onions
Directions
Preheat oven to 425°F and lightly grease a 9×13” baking dish.
In the prepared baking dish, combine French onion soup and beef broth and pour it into the baking dish. Stir in uncooked rice. Lay slices of butter on top of the rice/soup mixture.
Cover with foil, and bake in preheated oven for 30 minutes.
While rice is baking, heat a large skillet over medium heat. Once hot, add a drizzle of olive oil, and add the diced onion and cook, stirring occasionally for 3-4 minutes until softened and translucent.
Increase heat to medium high, then add ground beef and garlic powder. Cook, crumbling the beef as it cooks, for 4-5 minutes, or until cooked through. Drain, then return skillet to the stovetop. Stir in the soy sauce and Worcestershire sauce.
After the rice has baked for 30 minutes, remove dish from the oven, uncover and stir in the beef mixture. Return baking dish (uncovered this time) to the oven and bake another 25 minutes.
Remove dish from oven, top dish with cheese and fried onions. Return to the oven and bake another 5-7 minutes, or until cheese is melted and fried onions are golden brown.
