Chicken Tuna {Gluten Free} Casserole

Another childhood favorite of mine that I wasn't sure my family would like or how I would make it gluten free for my middle son. Well, I did some research, combined multiple recipes, tested tested and tested again and finally found the most amazing and delicious recipe that is FAMILY approved!

Chicken Tuna Casserole Ingredients 8oz Noodles (gluten free, if needed)

2 Tbsp butter

1 small onion, diced fine 2 cloves minced garlic 2 Tbsp flour (gluten free, if needed)

1 1/3 cup milk 1c chicken broth

1 tsp salt

2 - 12.5oz canned chicken

2 - 7oz canned tuna

Shredded cheese, to taste

Potato chips, crushed (optional)


Directions

Cook noodles according to package, drain and set aside. Preheat oven to 350 degrees.

Melt butter in skillet, then add in diced onion and cook until translucent (3-4) minutes, add in garlic and cook until fragrant. Sprinkle flour over onion and garlic mixture and once mixed together, gradually add milk, chicken broth and salt.


Cook until slightly bubbly. Meanwhile, in a separate bowl, mix together canned chicken and canned tuna. Add meat mixture to sauce mixture and mix well. Once mixed, add in cooked noodles.


In a 9x13 pan, spray oil to prevent sticking and pour mixture evenly into pan. Sprinkle with cheese and top with crushed chips.


Cook 20-25 minutes until cheese is melted and mixture is bubbly.


P.S. Feel free to add seasonings, dry onion soup mix, BBQ potato chips or your other favorites to customize to fit your taste buds!
