Crack Chicken

This is a simple, cost effective and tasty recipe that can be served in a variety of different ways. It's a very basic recipe but a major family favorite and it freezes well too! It is very addicting though, so be prepared to over-indulge!

Crack Chicken


Ingredients

4 chicken breast

1 pkg (3 Tbsp) ranch dressing mix

8 oz cream cheese

1 cup mayonnaise (we prefer Greek yogurt)

1 lb bacon, cooked and crumbled

1 cup shredded cheddar cheese 1/2c chicken broth (if cooking in Instant Pot)


Directions

<<CROCK POT>> Place chicken breasts in the crock pot, sprinkle with ranch seasoning and place cream cheese on top.


Cook on low 6 hours.


Remove chicken and shred chicken with 2 forks and add it back to the slow cooker


Stir in the mayonnaise/Greek yogurt, cooked bacon, and sprinkle with cheese.


Replace lid and cook on low for 15 more minutes or until cheese is melted.


<<INSTANT POT>> In the Instant Pot ( or pressure cooker ) insert, add chicken broth, chicken breasts, sprinkle with ranch seasoning, and place cream cheese on top.


Turn device on. Secure lid. Set pressure valve to SEALING. Select MANUAL or PRESSURE COOK; cook on high-pressure 15 minutes. Allow the pressure valve to Natural Pressure Release at least 10 minutes. Quick-release pressure after 10 minutes by venting the seal. Once pressure pin drops, open lid and turn off device.


Remove chicken and shred chicken with 2 forks and add it back to the instant pot


Stir in the mayonnaise/Greek yogurt, cooked bacon, and sprinkle with cheese. Mix well.


Serve on buns, with tortilla chips, on tortillas/tacos, over salad/veggies, with crackers or as ‘grilled cheese.’ Enjoy!
