St. Patrick's Day is one of my favorite days of the year! We enjoy the South Side Irish Parade then fill our belly with delicious food! This year, I almost missed the meal since my boys ate it all before I was able to get home! Another themed dinner for the family and a happy mama!

Slow Cooker Corned Beef & Cabbage Ingredients 2lbs red potatoes (we used russet this time), quartered 1 onion, cut into pieces 5 carrots, peeled 4 cups water 4 pounds corned beef brisket with spice packet 6 ounces beer (use your favorite beer) ½ cabbage coarsely chopped Directions
Place onions, potatoes, and carrots in the bottom of the Crock Pot
Pour in water and place brisket on top
Pour beer over brisket (about a half a can)
Sprinkle brisket with spices (I use ½ packet)
Cook 8 hours on high, 1 hour before serving stir in cabbage pieces and cover crockpot
