Keeping Taco Tuesday fun and new is a top priority for me. I love how versatile all the recipes can be and its rare we come across one that isn't good. This was something new and I snuck in beans, using refried beans, since my kiddos aren't a fan. This was so good, family approved and you can even freeze half for later if you wanted.

Frito Taco Casserole Ingredients 1lb ground beef (I also used 1lb ground turkey)
1 small onion, diced
16oz refried beans
2 cups rice, cooked
2 cups shredded cheese (mexican or cheddar)
1 cup salsa
1/4 cup water
1 taco seasoning packet 1 cup Fritos corn chips
salt, to taste
Directions Preheat the oven to 350 degrees and spray a 9×13 baking dish with non-stick cooking spray.
In a medium saucepan, brown the ground meat with the diced onion and drain grease.
Add in the 1/4 cup of water and taco seasoning packet and let simmer on low for 10 minutes.
In a large bowl combine the taco meat, salsa, cooked rice, shredded cheese and refried beans.
Pour the mixture into the prepared baking dish.
Top with 1 cup of Fritos and bake for 25-30 minutes. If prepping to bake later, do not add Fritos until you are ready to bake.
