A twist on a comfort meal most of us know and love! This had such good flavor, can be made fresh or prepped and baked later! Add some air fryer veggies and you’ve got the perfect meal for the whole family! (Can even be tweaked for those who don’t like mashed potatoes) I originally cooked this with the raw meatloaf mixture topped with the potatoes (that is the video you will see) - next time, I will follow the following directions - bake the meatloaf first, then top with mashed potatoes.

Loaded Potato Meatloaf Casserole
Ingredients
3c water
1c milk
2 4 oz pkg garlic flavored instant mashed potatoes
2 lb ground meat (we used beef & turkey)
1/2 cup onion, diced
4 tbsp brown sugar
2 tbsp Worcestershire sauce
1 cup crumbed pork rinds (or breadcrumbs)
2 eggs
2c cheddar cheese blend, shredded
1/2c real bacon bits
Directions
Preheat oven to 400F.
In a medium saucepan bring water and milk to a boil.
Remove from heat and stir in instant mashed potato powder. Set aside. In large mixing bowl combine ground beef, onions, brown sugar and Worcestershire sauce using your hands.
Add pork rinds if gluten free (bread crumbs) and egg to the meat mixture and continue mixing it with your hands.
Press the meat mixture evenly into an 9x13 baking dish.
Cover the dish with aluminum foil and place in oven for 30 minutes.
Remove from oven and drain grease if needed. Spread the mashed potatoes over the meat using a rubber spatula.
Sprinkle the grated cheese on top followed by the bacon bits.
Cook the dish covered again with aluminum foil for an additional 30 minutes.
Remove from oven, discard foil and allow to cool for 10 minutes before slicing and serving.
