When I think of comfort food, I think of my mom's pot roast with bread and butter. My kids, however, do not love pot roast like I did so I found an updated version that included one of their favorite things: meatballs. I even kept it super simple and used frozen meatballs!

Meatball Pot Roast Ingredients
32oz bag frozen meatballs
1 onion, diced
2c diced potatoes (red or golden)
4 carrots, peeled and quartered
1 carton of beef broth
4 beef bouillon cubes
1 can of tomato paste
1T corn starch Salt, to taste
Directions
In a 6qt crock pot that's been sprayed with non stick spray, add the quartered carrots, chopped onions, baby potatoes and then season with salt. Stir to combine.
Place the meatballs on top of the veggies.
Next, in a saucepan, combine the beef broth, bouillon cubes, and tomato paste and whisk while it comes to a simmer. Reduce heat and let simmer for 10 minutes.
Pour the mixture over the meatballs and veggies. Cook on low for 8 hours. At 7 hour mark, combine cornstarch and 1/4c water and whisk until smooth. Slowly add mixture to crockpot, stir to combine and continue to cook for 1 more hour.
