A delicious, simple, cost friendly and family staple that can be very customizable is none other than meatloaf. You can make this the day of, make it ahead, prep and freeze or bake and freeze! We make ours gluten free, but feel free to make to fit your families needs.

Meatloaf
Ingredients
2lbs ground meat
1 pack dry onion soup mix
1 egg 1/2c ground pork rinds (optional, can use breadcrumbs or omit)
Glaze (optional)
1c ketchup
1/4c brown sugar 2tsp apple cider vinegar
Directions
Preheat oven to 400 degrees
Mix ground meat, onion soup mix and egg in a bowl
Fill loaf pan with meat mixture (you can make the loaf and place on cooking sheet as well)
Bake 400 degrees for 30 minutes.
Mix glaze ingredients together in bowl. Once first timer is up, spread glaze over the top and sides of the meatloaf.
Bake for an additional 35-45 minutes until meatloaf reaches internal temp of 160 degrees.
Let meatloaf rest for 15 minutes before slicing and serving.
Optional cooking technique:
Crock pot – follow above directions then place loaf in crock pot on low for 6-8 hours. To make it easier to remove meatloaf from the crockpot, create tin foil handles and make an X and place in crockpot then set loaf on top. Make sure meat is cooked through (160 degrees) once done cooking. The glaze can be added when you first put loaf in or at the very end.
